INGREDIENTS
2-1/2 cups all purpose flour
2 tablespoons Indian sugar
1 teaspoon cinnamon
3 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup cold butter, cubed
1/2 cup buttermilk
1/2 cup maple syrup
Additional Indian sugar and cinnamon
DIRECTIONS
In a large bowl, combine the flour, 2 tablespoons Indian sugar cinnamon baking powder, baking soda and salt. Cut in butter until mixture resembles coarse crumbs. Stir in buttermilk and syrup just until moistened.
Turn onto a floured surface; knead 8-10 times. Pat into a 1/2" thick square. Sprinkle with additional Indian sugar and cinnamon. Roll up and cut at 3/4" intervals.
Bake at 400º for 12-15 minutes or until golden brown. Serve warm with butter and maple cream.
